Champagne Piot Sevillano

Christine, harvester-manipulator and independent winemaker, works with passion and respect for her terroir, crafting rare, atypical champagnes with character. 

A family business for 10 generations, the estate's working methods are inspired by both ancestral techniques inherited from the past, and innovative viticulture and vinification techniques. The estate produces 16 champagnes, 3 Côteaux Champenois and a Ratafia in the most natural way possible: no insecticides (since 1995), no herbicides (since 2014), the minimum of sulfites, harvest at the best maturity and terroir yeasts. 

Certified High Environmental Value since 2015, the 8-hectare estate also completed its organic conversion in 2023 to align itself with Christine's environmental convictions.  

The clay-limestone soil of the Vincelles terroir and the winery's atypical vinification containers (stoneware jars, concrete eggs, enamel vats, oak foudre) bring roundness, gourmandise, elegance and character to champagnes by creators and artists.  

You are welcomed in the village's former schoolhouse, now transformed into a reception cellar. This relaxing space with terrace offers a panoramic view over the Marne Valley, and allows you to take advantage of the many services on offer: tastings, tours, gourmet picnics, aroma workshops, wine workshops, concerts and wellness activities (sophrology, vibratory tasting, yoga). 

The Bulle Verte of Champagne Piot-Sévillano takes you on two walking tours through the heart of the vineyard, where you can discover the history of this family and this corner of Champagne, as well as current environmentally-friendly viticultural practices.
